Cesari Amarone is made from Corvina, Molinara and Rondinella grapes from Cariano, the best zone for Amarone. These grapes are dried on racks and trellises until January, at which time the shriveled, raisin-like grapes begin the slow, long fermentation and aging process. After 4 years of careful and patient aging, the resulting wine combines sheer power with ripe softness and an ethereal bouquet. The taste is uniquely opulent and deep. This is a wine which will develop in the bottle for a generation or more. Enjoy With: Amarone should be paired with strong, elegant, flavorful cheeses such as parmigiano reggiano, grana padano and gorgonzola. Try it with game or with nuts. This is an impressive wine which should be served last, due to its impressive size. This wine is a wine of contemplation. Port lovers will enjoy this Amarone.
